Depuis le décès de Stéphane Moreau fin août 2016, son épouse Virginie a pris sa suite au domaine et s'attache à poursuivre les orientations retenues jusqu'ici. Avec un travail soigné à la vigne, des élevages longs et des filtrations légères, les chablis du domaine s'affirment dans leur caractère, avec profondeur et salinité. Le domaine s'est désormais calé sur des élevages longs qui n'alourdissent ni n'aromatisent le chardonnay local, ici récolté juste mûr. Des chablis savoureux, jamais démonstratifs mais parfaitement digestes, qui vieillissent fort bien.

Situé sur le lieu-dit Sécher, les sols ont ici une forte présence de calcaire. Cela donne un caractère assez « tendu » au vin, quoique celui de Moreau-Naudet soit plus rond et ample que celui de Dauvissat. Les vignes sont toutefois à l’opposé l’une de l’autre sur le lieu-dit, ce qui explique probablement cette différence de caractère au sein du cru. Le nez de ce premier cru Vaillons nous révèle de magnifiques notes de fruits jaunes, d'agrumes, de poire avec une pointe fumée. La bouche est complexe et franche avec un équilibre parfait entre rondeur et fraicheur.

RETURN

You may return any item that you would not be fully satisfied within 7 days of delivery to receive a full refund. This includes the cost of returning the product.
