Fort de 29 hectares de vignes (certifiées en Bio en 2018), ce domaine fondé en 2016 s'appuie sur le vignoble conservé par Romain et Damien Bouchard, les enfants de Pascal Bouchard, qui a vendu en 2015 son activité de négoce. Dans le parc d'une belle demeure de Chablis, un chai enterré a été construit pour accueillir des raisins vendangés à la main, vinifiés en levures indigènes et sans autre intrant qu'un peu de soufre après pressurage et à la mise. Avec 1,5 hectare en grand cru (Clos, Blanchot, Vaudésir), 8 hectares en premier cru (dont Fourchaume, Mont de Milieu et Vau de Vey), et le reste en chablis et petit-chablis, cette adresse devient une valeur sûre de l'appellation. Les vins généreux et mûrs risquent de déconcerter les amateurs de chablis épurés, mais ils renouvellent le paysage local.

Le Chablis Premier Cru Beauroy du domaine de l'Enclos est issu d'une grande parcelle de vignes de Chardonnay plantées en 1980 sur une pente raide à proximité du lac de Beine. Le nez de ce vin nous révèle de délicieuses notes de fruits blancs mûrs, de pêche de vigne, de nectarine, de fruits exotiques avec une pointe fumée. La bouche est ample et pleine grâce à un très bel équilibre entre maturité du fruit et tension minérale.
