Sylvain Pataille se révèle un des plus ardents défenseurs des terroirs de Marsannay et de Chenôve, avec le méconnu Clos du Chapitre, situé aux portes de l'agglomération dijonnaise. Engagé en bio depuis 2008, le domaine de 17 hectares perd en 2016 la certification suite à l'usage d'un traitement prohibé, choix douloureux pour sauver le peu de raisins qui subsistait. Exigeant, le vigneron travaille ses vignes au cheval, intervient le moins possible, conserve une proportion de vendange entière et s'attache à élever longuement ses vins, parfois plus de deux ans, quasiment sans soufre. Les vins affirment des personnalités sincères, attachantes et pleines de vitalité ; ils méritent d'être plus amplement découverts, notamment pour ses merveilleux aligotés.

La cuvée Bourgogne Aligoté du domaine Sylvain Pataille est issue de l'assemblage de vignes plantées en 1949 sur une parcelle en coteau « Les Roseys ». Elles sont enracinées dans des sols d'argiles rouges sur calcaires apportant une belle puissance et d'autres très vieilles vignes sur le terroir unique du « Clos du Roy » livrant fraîcheur et minéralité. Après 11 mois d’élevage en fûts sur lies puis 1 mois de cuve, le nez de cet Aligoté nous révèle de magnifiques notes grillées, d'’agrumes et des fleurs blanches. L’attaque est franche et vive puis laisse la place à une seconde bouche ample et séveuse. La finale est longue et possède d’une tension salivante.

RETURN

You may return any item that you would not be fully satisfied within 7 days of delivery to receive a full refund. This includes the cost of returning the product.

You should receive your refund within four weeks after the return date. But we have a habit of refunding more quickly. This period includes the transit time required to receive the product you are returning (5 to 10 working days), the time required to process your return once we have received it (3 to 5 days) and the time required to your bank to process our refund request (5 to 10 business days).
