Ce Berrichon a étudié la production forestière avant de foncer dans l’apprentissage de la viticulture à Montlouis. Il en profite, à la fin des années 1990, pour dénicher quelques arpents sur l’appellation et prendre des fermages. Depuis ses débuts, Frantz Saumon a fait du chemin. Artisan méticuleux et viticulteur assidu, ses vins recherchent des équilibres naturels et présentent un caractère sain et gourmand. Les étiquettes Un Saumon dans la Loire désignent des achats de raisins.

La cuvée Menu Pineau Romorantin de Frantz Saumon est issue de raisins de Menu Pineau et de Romorantin vinifiés en futs de 450 litres puis élevés sur lies pendant 6 mois. Le nez de ce vin nous révèle de magnifiques notes de de coings, de fleurs blanches, d'amandes douces, d'agrumes, de pierre mouillée avec une pointe herbacée. La bouche est ample et tendue grâce à un incroyable équilibre entre rondeur du fruit, tension minérale et finale saline.
